It doesn’t get any yummier than this Cherry Ice Cream Coke Float recipe, a fruity twist on a classic favorite! Ice cream floats are one of my favorite desserts from childhood and this creamy, fizzy dessert fills me with nostalgia and makes me feel like a kid again.
Enjoy A Fruity Twist On The Classic Ice Cream Float With A Cherry Ice Cream Coke Float
An ice cream float is part beverage and part dessert that consists of carbonated soda pop poured over a couple scoops of ice cream and served in a drinking glass. Ice cream floats are traditionally made with vanilla ice cream and topped with a favorite flavor of pop such as Coca-Cola, rootbeer and orange soda. For a fruity twist on the classic ice cream Coke float, ditch the vanilla and build your float with cherry ice cream and cherry dessert sauce instead!
To make a cherry ice cream Coke float, you will need a tub of cherry ice cream, fresh, frozen or canned cherries and a bottle of Coca-Cola soda pop. You can buy a tub of ice cream from the store or you could use my 15-minute homemade cherry ice cream recipe which is what I used to make this float.
I used fresh cherries to make my cherry dessert sauce. I tossed 2 cups of pitted cherries, 1/4 cup sugar and 2 tablespoons water into a saucepan and simmered over medium low heat for 10 to 15 minutes, until the cherries were soft. If you are using frozen cherries, omit the water because they will have plenty of liquid. I pureed the cooled, softened cherries in my blender which turned into a smooth and thick dessert sauce that is the perfect topping for ice cream.
If you don’t have fresh or frozen cherries, you can use a can of cherries instead. Just drain and pour the can into your blender and puree. There is no need to add sugar because they will be sweet enough from the syrup they are canned in.
Here is the recipe for my cherry ice cream Coke Float. It makes enough for 2 ice cream floats but the recipe can be halved or doubled if desired. I used approximately 1 cup of ice cream, 1/4 cup dessert sauce and 1/2 cup soda pop per float. Feel free to adjust the recipe as needed.
- 2 cups cherry ice cream
- 1 small bottle Coca-Cola pop
- 2 cups pitted cherries
- 1/4 cup sugar
- 2 tablespoons water
- Combine cherries, sugar and water in a saucepan and cook over medium low heat for 10 to 15 minutes, or until the cherries are softened.
- Pour the mixture into a blender and puree.
- Allow the sauce to cool completely before using.
- Store in the refrigerator for up to one week.
- Place a scoop of ice cream each into the bottom of 2 large drinking glasses.
- Drizzle 1 1/2 tablespoons of cherry dessert sauce on top.
- Repeat 2 or 3 more times until each glass is nearly filled to the top with layers of ice cream and sauce.
- Holding the glasses at an angle, slowly pour the Coca-Cola pop into each glass, filling them to the top.
- Add a couple of spoons, dig in and enjoy!
